Winemaking

Profile is our flagship red Bordeaux blend showcasing the very best fruit from each vintage. Our favorite lots of Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc are chosen for their concentration, depth of flavor and fine tannin structure to produce a wine that is rich, elegant and opulent. After a six day cold soak, the wine underwent extended maceration. We aged Profile for 25 months in 90% new French Oak barrels (Taransaud, Darnajou and Sylvain).

Tasting Notes

Aromas of cassis, raspberry, perfume and vanilla are interwoven with tobacco, cedar and cocoa. On the palate the wine is dense and concentrated with a finish that is long and complex. We recommend decanting in its youth. Our favorite pairings include beef tenderloin, and herb encrusted rack of lamb.
