2021 Merryvale Cabernet Sauvignon Reserve

Our Reserve Cabernet Sauvignon is a stunning blend of Cabernet Sauvignon and Cabernet Franc, sourced from our Profile Estate Vineyard on the ridges of Conn Valley overlooking St. Helena. The fruit was hand harvested at night to retain freshness and acidity. After a 5 day cold soak, the wines began native fermentation in a combination of oak and stainless steel. We completed two pumpovers per day, until dry, and pressed between 14-21 days. Spontaneous malolactic fermentation occurred in barrel, 100% French oak, 80% new. The wine was bottled unfined and unfiltered.

Tasting Notes

In the glass, the wine presents a deep, inky garnet hue with a slight purple rim, hinting at its youthful vibrancy. The aroma is rich and enticing, offering a complex bouquet of ripe blackberries, dark chocolate, and figs. There’s a subtle undercurrent of dried herbs and cedar, lending an earthy and forest-like quality to the wine. The fruit is ripe and concentrated, with a velvety texture that coats the palate. There’s a beautiful interplay between the fruit and the well-integrated oak, which adds layers of complexity. The tannins are refined and supple, providing a firm structure that promises aging potential. A young, powerful wine that will only improve and evolve.

Blend: 96% Cabernet Sauvignon, 4% Cabernet Franc
