Winemaking

Sourced from three top vineyard sites in Napa Valley, the fruit was hand harvested and pressed to tank for settling. The wine was fermented in concrete tank, 320L neutral French oak cigars and 75 gallon stainless steel barrels. A time honored and labor intensive technique, barrel fermentation unlocks the potential of Sauvignon Blanc to be both luscious and precise. We barrel ferment and age in small lots, using different barrel sizes and shapes to layer texture and flavor. Large format 320L neutral French oak and 75 gallon stainless steel barrels provide an outstanding platform to let the purity of the Pope Valley and old vine Yountville fruit shine. A small portion was fermented and aged in concrete to enhance minerality and complexity.

Alluring aromas of tropical fruits, white flowers, and honeysuckle. The classic barrel fermentation and Ă©levage in neutral French oak and concrete provides generous texture combined with vibrant focus and minerality. A layered, pure and precise Sauvignon Blanc that showcases piercing acidity and fruit complexity as the wine opens. Long and lingering, pair this wine with summertime and seafood over the next 5 years.

Tasting Notes
Our Sauvignon Blanc is a very small, hand-crafted and artisan produced wine. The techniques used go back to the time Winemaker Simon Faury spent in Bordeaux working for one of the most renowned Sauvignon Blanc and white wine producers in the world, Domaine de Chevalier. First we use the basket press, which delivers very low yields but extracts at low pressure giving us only the best juices—the clearest with the highest acidity. The result is a rich, deep Sauvignon Blanc with aromas of stone fruit, citrus, guava and grapefruit. Fresh and lively on the mouth, this wine is very balanced with a nice weight and freshness overall. The finish is very floral with a touch of savory herbs.

Sourced from a very rocky block of Juliana Vineyards in the Napa Valley.
Winemaker Notes
One third of the wine was macerated for 10 hours and two thirds of this wine went directly into a basket press and was slowly pressed at low pressure. As we press we fill barrels and not tanks. We finish the press cycle with not only one or two juice lots but with sixteen! Each barrel that was filled was then racked on its own and returned to the same barrel for fermentation. Fermentation lasted 3-4 weeks and the wine was aged in 10% new French oak barrels without racking on its full lees until bottling. We used 85-gallon cigar barrels that provided better lees contact and a much softer integration of the oak to the wine. The result is body and texture rounding out the palate and added complexity to the flavors and aromatics.
